Caprese Salad
Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly chopped basil
- 1lb fresh mozzarella sliced thick
- kosher salt and black pepper to taste
- 3 whole ripe tomatoes
- 3 tablespoons balsamic vinegar
- Fresh whole basil leaves
Directions
- Combine the oil and chopped basil in a bowl. Add the mozzarella and season to taste with salt an pepper. Cover and marinate in the fridge for at least 30 minutes.
- Slice the tomatoes into thick slices and add the tomatoes to the mozarella. Toss to combine. Transfer the tomatoes and mozzarella to the serving plates. Add whole basil leaves. Drizzle with the balsamic vinegar. Top with additional salt and freshly cracked black pepper.
